I know nothing about Mahjong. What are the differences?

Don't be dumb playing Japanese style is way different than Chinese. There isn't richi or the bonus in Chinese

Scoring and bonuses mostly. Chinese is the simplest and most traditional with just eating and winning. Everyone else has these crazy shit and scoring system that prevents winning. Taiwanese is probably the most balanced in terms of fairness and understandable

Chinese when you are playing for money.
Japanese if you have OCD.

Taiwanese is however shit to play for just casual games, especially when you have noobs mixed with regulars. I'm running "Mahjong Wednesdays" during academic year, most people stay the fuck out of anything than Chinese.
chinese tiles are huge and japanese ones look cute, like candies, but I believe huge means harder to cheat. Chinese game is twice as long, but theoretically, people cling to dealer sit because bonuses, that prolongs the game. Japanese has a ton of fun thematic comics to be all metafag about mahjong, with whole thematic magazines too, but only some sad percent of it is translated in full
