What's the right balance between science and fantasy in science fantasy?

Science Fantasy isn't ScFi and Fantasy, it's Fantasy with superficial SciFi elements plastered over it.

That said, exploring the consequences of Fantasy setting or trying not to handwave in SciFi tends to produce the same result because they're both just cliches of Weird Fiction.
Maybe try one of those? The latter is easier to direct, but the former usually gives better results.

I tend to enjoy settings which make use of the logical extrapolation of in universe principles, creating a new, logically consistent 'science' from the fantastical rules of the universe, rather than just clumsily applying real science on top of fantasy stuff.

Magic exists as an actual force within the universe. It has been studied, and we understand it as well as we understand any other aspect of our world; it has been incorporated into physics, chemistry, biology, and other branches of science, if it isn't its own branch altogether. Technology incorporates principles of these scientific developments, meaning medicine and chemistry includes alchemy, engineering includes enchanting, and so on.

There's nothing more tedious than yet another poorly thought out magic versus science setting, with the possible exception of yet another urban fantasy setting where the existence of a fundamental principle of our reality has somehow escaped notice.

So true, especially since if magic is supposedly real scientists would be ALL OVER that shit and trying to figure out how it works and how to do it better, because THAT'S THE POINT OF SCIENCE. I do like extrapolations of consistent magic systems and such, like in the Edge Chronicles where the assorted "lighter when colder" materials can be a problem for skyships because if they go too high or get too cold they'll fly up to where it's colder, thus flinging them off the face of the earth with a positive feedback loop. Or literally everything in Mistborn, because Sanderson has a massive boner for complex and consistent rules.

Also Eragon if the writer had any idea what he was doing. That magic would be OP as balls if you decided to be sensible about it. Transmute antimatter for instant meganuke, pinch a couple arteries for instant kills (which does show up eventually, but is supposedly some great Elvish secret as opposed to the first resort of anyone who's ever read an anatomy book), use the mindsense to perfectly target a bunch of stones to smash the skulls of enemy mages by pure kinetics, etcetera.
