I think it's mostly irrelevant
In a lot of settings and systems the difficulty included in killing undead is more about disrupting the evil magic juice that powers them, their own body is much less useful. It could be that a fat guy and a nonfat guy have the same amount of evil undead magic juice in them, just more concentrated in the nonfat guy, and they're both more or less just as durable and dangerous.

Depends on the purpose. Assuming you're being moved by muscles an undead doesn't feel pain and can just overcompensate for weight until the muscles are too damaged to move. If you need a wrecking ball putting a heavy zombie on the field at full tilt is a good idea since no matter how good your armor is you'll still get knocked to the ground. Of course once there you'd ideally have other undead to finish the target off or otherwise occupy it but a few wrecking balls never hurt anybody.

Depends ona lot of things.
For example, if I were an evil necromancer and raising tumblr-levels of diversity in body builds, I'd make use of the fat people by stuffing shit into them like explosives.

In fantasy battlefield, fat undead. Far more durable, speed is less of a factor in infantry fight.
in survival situation, skinny undead is more dangerous. Less places to run to if the target have the same dimensions as you do.
