If you're playing pathfinder there is a Cloistered Cleric archetype.

Otherwise you could just make a high wisdom, high int cleric who doesn't wear armor or have great combat stats. Focus on various knowledges and spellcasting rather than being a holy knight.

MM, if you want to, I'd say build a character as a scholar. Thing is, cleric in DnD are more like missionaries, monks live a secluded existence by definition. Rather than adventuring or spreading the Word of God, a monk as we imagine would be bound to his monastery and serve to minister to the needs of peoplein the area, either through praying for hours upon request on their behalf, charity, or actually ministering mass, or probably acombbination of the three. Naturally, that makes playing an adventuring monk kind of difficult. If you want to, I'd say play either as a monk who grew dissatisfied with monastic life and wanted to do good out in the world, possibly breaking vows to do so. The easier route honestly would probably be just playin a monk thrown into the party who really pines for a return to his life, or just a quiet priest who is less zealous to spread the faith than he is calm and willing to do God's will as it comes before him. Course, I'm not an expert and all of this is speculation, so do your research if you really wanna faithfully play a monk

Get ñaid for praying to save the souls of killers and warriors in the party. Remember: Killing is a sin, but you can get reedemption. A monk can do it in you name for some coin.

Play a Priest to level 3, minimum, then decide to either go all in on the deity juice by continuing Priest, becoming a force multiplier by taking Sage or tend to earthly things by taking Keeper. There are plenty of options in Fantasy Craft.
Priest 3 gives me two steps along a Path. This means I can take Destruction II (acid fists, AP 2), Fire II (fire fists, Scorching Ray), Light II (blinding fists, never need a torch), Protection II (+2 Def, Shield Other), Strength II (Brawn spell), or Nightshade II (guaranteed successful poisoning if you win a grapple).

I remember watching a video in class where monks had to fight off vikings with only their bare fists and quarterstaves. Use lots of skill points in knowledges. Read a lot. Have good charisma or something.

You'd be more of a navigator / knowledge based class, not so much about combat. But you would know lots of things and be able to get the party from A to B with no problem - know a bunch of languages and be able to solve problems, maybe find traps. And know a dick ton about religions.

You could probably even work fighting in if you tried hard enough - some kind of swordsman or archer like friar tuck

If he's in a D&D style adventuring party?
Probably some kind of alchemist or wizard. All that time time translating ancient texts probably turns up all kinds of crazy lore in a fantasy world. Accounts of lost rights, apocryphal revaluations and mystic geometries, diagrams of ancient machines and treatises on forgotten crafts. So he has a smattering of mystic knowledge, he's probably so immersed in it he doesn't see it as anything heretical but just an enlightened view of gods creation. He might be over eager to share his eldritch discoveries and heartbroken to learn that he's a heretic.

William the Bastard's half-brother Odo was a priest who was present at the battle of Hastings. He is depicted in the Bayeux tapestry as a club-wielding It looks more like a random tree branch desu knight in full armour.

Of course the Knight Orders were "Monks of War" so this kind of choice would have been ludicrous for them.
