My players are gonna go up against a titanic storm monster but I am not entirely sure how to make this fight interesting for everyone involved.
Does anyone have any experience with gargantuan fights?
Picture the sandstorm scene in mad max fury road. Now imagine if instead of simply running through it they were fighting it

how do you kill a storm? stab it in the dick?
Jumping between moving platforms, dodging Lightning bolts and hail while strong winds try to throw them off.
Obviously the monster needs a physical core that can be attacked

I've had some success running giant enemies as a collection of mobile traps instead of standard creatures. Obviously depends on what system you're using though.

Well, the best thing to do, as has been pointed out here, is to have him be a normalish sized monster inside a titanic storm. That means lots of checks not to get swept off your feet or disarmed on the way in, then an encounter with a dude who's principle move is going to be forcing players back out into the storm. Should be fairly straightforward.
Gargantuan fights in general tend to come down to how the system is prepared to handle things. Generally I stay away from them because if your party can take down a monster the size of a sky-scraper, its hard for them to feel actually afraid of anything.
