I want to try hacking/homebrewing a system to run a kung fu fantasy

Well OP, a lot depends on your vision for how the system will look.

How crunchy do you want it? Are you aiming for low or high Wuxia? Very classical or with room for modern Honk-Kong action cinema too?

These are important questions which will help us give you a better answer.

(Also, as someone who loves LotW I'm more than willing to help out if you have any specific questions or want any clarifications. Then again, I can't blame you for giving up entirely, the core book editing and layout is a fucking travesty.)

HERO or GURPS might be what you're looking for. They're generic systems built with the intent of being extremely customizable.

I've never actually played GURPS, but HERO would be pretty easy to set up for that kind of thing. It has a bit of a learning curve, though.

Not very. I don't want there to be a whole lot of book keeping. Wanna go for rules light sort of stuff.

I guess high? I want people flying around and using mystical techniques and magic and shit.

Powered by the Apocalypse (games using the modified Apocalypse World system) is very good fit for anything that has strong archetypes. You could take LotW's classes, transport them into PbtA, and call it a day and it'd work.

AW is a very Top Down designed system; it takes the goal of "what I want to play" and then makes every part of the system revolve around that.

HERO and GURPS are the opposite. They are bottoms up designed systems. You have rules for everything, but what sort of gameplay style emerges is not controlled for at all.

I massively prefer AW's approach, even if you are going for different mechanical feel in the end (i.e. you want more tactical combats).
