CoC has barely changed since first edition.
6th is perfectly fine and you will be able to have fun and interesting games.
7th has it's own benefits but honestly Chaosium is good at not reinventing the wheel.
7th gives you a slightly more streamlined system and adds some optional rules to make things more personal.
IMO i'd recommend getting 7th because it's pretty dang good. Keep what you like and leave out what you don't rubs me in all the right ways.
But you will be perfect just as you are.

DESU the whole King Kong ideal has a lot of subtle lovecraftian elements which I think could be maximized to great effect.
CoC has a lot of big monsters you can use and giving them some odd magical abilites will make them stand out.
One thing I always advise is to remember that these creatures are smart. Like really smart. They're not just hungery brutes. If you want to really scare the shit out your players nothing works better than having the horrid monster that could tear you apart learn how to use your radio's.

I think they removed the "resistance table" from 7th and just let you handle opposed tests as opposed rolls
Aside from that improvement (which is how everyone I know plays 6th anyway) I don't know what else changed

Yeah there really was this feeling of being out of their scope and that it was beyond human power. The alien power and sheer scale that shrugged off everything there was to offer was great, not to mention the designs of the creatures of skull island.
