At this point, we witness a violent breakdown in animals' actions. Comparable to rabies, they would either kill themselves, go catatonic, or attempt to violently attack anything nearby.

Undead animals would probably act with the same purposeless hunger that human zombies have. What would be more worrying in an infectious situation is that there is literally no avoiding animals. A mosquito bite is instant death. Rats can sneak and chew into anywhere. Birds fly and attack from above
