I made a terrible mistake.
They untied my wrists and the wrappings around my head so I could eat. I was in a small cloistered room with the only light coming from a lamp in the next room through a small window in the door. I was terrified. The man standing in the cell with me looked like a highwayman, dressed in dark leathers with a travelling cloak, unshaven and hair in desperate need of a comb.He had thick gloves on that smelled like a stable as they removed my blindfold and gag. He only commanded me to eat, but otherwise didn't talk. The way he said it made it sound kind of like he had a northern accent, but it was too hard to say for certain.
It was hard to eat with him staring at me like he was, not to mention the stew was watery and cold, and the bread tasted stale. Normally I wouldn't have touched such appalling food, but I was so hungry that I couldn't help myself. From the look of my gaoler's face I didn't feel like complaining would get me very far either. My father has oft scolded me on my sharp tongue and for once I felt it prudent to bite back the litany of words I would have with this man.
When I was done eating, he took away the wooden bowl and spoon and got down on one knee, near the hem of my skirts. I shrieked on instinct, but it turned out he was only loosening the ropes around my ankles. So certain I was that this brute had ill intentions, but instead he simply kicked a brass pot I hadn't noticed and told me to make my water there should I feel the need. Then, with my discarded bindings in hand he had me stand on the far end of the cell while he opened the door.

I wasn't exactly in my right mind, but I couldn't bear to spend any longer trapped like some hound in a kennel. Boggans be damned! I summoned up the magical energies like I had practiced and threw them into my gaoler's eyes, using his shock and confusion to run between him and the now open door. My graces I think I never have run so fast. Not knowing where I was didn't matter to me, and I noticed a stairway and door like a cellar entrance leading up. There was a lock on the outside, and were I simply a duke's daughter I would still be trapped, but the magics I had practiced allowed me to unfasten the lock and a burst forth into the night air with ease, the sound of what was definitely Northern cursing coming from behind me.
There wasn't much time to take stock of my surroundings. The air was cooler than I expected, and there was a large building next to me with loud sounds and bright light coming from inside. From behind there was an outhouse that was being used, as I heard someone who was startled by the noise I had made. Turning around the corner of the building was the entrance. It was some sort of traveller's tavern, and the sign above the door looked like a strange sort of rooster. I hurriedly looked for letters that might identify the establishment, but a burst of sound and light as someone exited the building startled me. I didn't get a good look at who or what it was as suddenly large gloved hands grabbed my arms from behind and a large sack was slipped over my head.

Voices argued as my arms were forced behind me and rope was wound tightly around my wrists like before. There was shouting and more arguing and I was jostled around, forced to walk ahead of whoever still held my arms. A heavy metal hinge was banded around my neck, keeping the sack in place as I was made to return to the cellar. I tried to listen to what was being said, but they flung me down the stairs and I hit the ground hard. It was difficult to focus as I was drug back into the cell, the door slammed shut behind me. The voices got quieter and after hearing the cellar door slam shut as well, I could no longer make them out.

In mythology it's usually because their master wants them to.
When Perseus rescued Andromeda from a monstrous serpent it was because the gods had unleashed the monster on Andromeda's homeland for some slight and told the royal family through the oracle that only by sacrificing their princess to it they could make amends.
Since perseus was related to gods he was able to diffuse the situation when saving her.
This all reminds me of a campaign that never took off. DM wanted to run a game with dragon PCs kidnapping princesses in order to advance age categories. Princesses might be valuable for mundane reasons and kept for political connections, art objects orsnacks, or might have magical powers that made them valuable to keep around as casters or used to fuel the dragons own spells.
To ensure enough princesses for the party, the world was mostly going to be city-state kingdoms with their own royalty in each. Raid some farms for mutton, raid the capitols for princesses.

As I recall we were invading from a different plane where dragons were more common, and in addition to the party who start as hatchlings there were older, more powerful dragons we had to band together against. Possibly leading to a Council of Wyrms scenario later on.
Also, we had several class/lineages to pick from rather than the dragons in the game. So the heraldic, draconic dragons were more the fighter option, lung dragons were physically weak casters, wyverns were rogue types, linnorms barbarians, and wingless drakes somewhere between druid and ranger. All further modified by choosing our breath shape and type, custom evolutions, etc. I remember there was a pretty classic fire dragon from one player, another was doing a mind control sort with sleep breath and I was putting together a xenomorph themed beast.

Anyone can sire a child that is a princess, certainly blood lines (mostly royal ones) have better odds, but everyone has a chance. When the princess is born she is destined to become the Princess-of-something - Land, People, Area, Subject (like magic or water). Upon turning 18(?) she becomes a full realized princess and innately has some form of control or power over the topic which grows in power as she ages.
This is not to be confused with Magic (unless she is a Princess of Magic or water control or something), she wills the natural progress or mindsets of things.

I will agree that as cliche as the classic knight guarding/rescuing the princess scenario might seem, so often there is an aversion to playing it straight that it seems like doing so would actually feel like the real novelty.

Nobles tend to not become adventurers, either because they're arrogant pricks who think they're above it or because someone stops them due to their life being considered too valuable to risk. A noble who *did* have support to become an adventurer would have access to far more money and resources than any normal character, so it would fuck up the game balance.
The only real opening that leaves is to play a noble who ran away to become an adventurer despite their parents and bodyguards trying to stop them. That's a bit of a cliché at this point, on about the same level as "good-aligned drow who turned against their people and escaped to the surface, who has to deal with prejudice even as they strive to do the right thing".

Knights as heroic adventurers are seriously underutilized in a lot of modern fantasy/history fiction. Rag tag podunk adventurers can be awesome to, but in a way it seems like they themselves have become just as much a cliche as when heroic narratives were dominated by questing knights.
Knights also seem a natural focal point for dealing with empowered princesses. Whose most likely to be fighting along side an go-getter princess who actually goes out and solves problems? Probably her families most trusted men at arms. And it seems that a major focus on her empowerment as a military leader (which is what royals ARE in a crisis) would be her ability to interact with her knights/officers/common soldiery as an inspirational or commanding figure.

I had once wrote the concept of a story in which a prince from another realm had been turned into a princess by the king of another realm, and has been cursed to only be able to wear 'clothes befitting of a princess'. The more she accepts the body as her own, the more the curse wears off and allows her to access the magic locked away inside of her.

So basically she can't be here to raise a new princess, leaving her only (known) daughter in charge of being princessly, and handle her politicking counts and barons, admittedly along with the emperor consort, an orc (the princess isn't half orc, she's just a mildly swole aasimar, because divinity shenanigans).
I suppose things will get even more tangled once I'll reveal that the shaman/druid tieffling PC is actually the princess' sister abandonned in the woods at a young age for obvious "cucked by a demon" reasons.
