The biggest things about their mythology and warriors are probably the blood sacrifices and jaguar warriors.
Blood sacrifices were mandatory since in their beliefs the gods were not immortal and in need of blood (which was a way to transport the soul) to live longer. They shoved hooks into their dicks to get into a pain-induced trance and collected the blood on paper. This paper they burned and the smoke which got red from all the blood was to them mystical soul energy flying to the gods.
Jaguar warriors are a good example of their selection rituals. They threw their kids into the jungle to survive and if they brought back the pelt of a jaguar they would wear them and be one if their aspect. (Pretty much the same stuff as with berserkers).

The Spaniards were part of a pretty vast war everybody initiated against the Aztecs. Natives outnumbered them I think something like a thousand to one in that conflict.
The Aztecs were crushed under the weight of everybody in the region wantig them dead and the Spaniards basically found a comfortable corpse of an Empire they could slip into afterwards. Something that awkwardly fit the way they were trying to get their money's worth out of native communities.
Situation isn't that different from the Roman conquest of Gauls - the region had constituted itself into kingdoms that were organized enough to be made vassal states, which is why conquest and control was possible for Caesar and others. We see them not doing so great in places that had less political organization than that.

Oh, I'm not really hating on themmuchbecause it actually makes quite a bit of sense in their mythology.
The Aztecs believe that the Sun, Moon, and Earth were all created from the actual living flesh of the gods (fun fact: The reason the Moon has so many craters is because the God who sacrificed himself to make it had horrible acne).
As all men of learning know, living things die. While the Gods themselves exist outside of time and can never truly die (unless killed by another god) when they cast off a part of them, such as when they made the world, it loses its immortality and becomes "mortal." This means that it will eventually rot and die.
The only way to keep it alive, of course, is to keep its vital blood flowing. The problem, of course, is that no blood runs through flesh not attached to a body.
As such, the only way to stop the world from falling apart is to contantly replenish the Earth, Sun, and Moon with fresh blood, that it might continue to live. Any man, woman, or infant of honor would naturally be willing to offer up their own flesh, as a gesture of appreciation for the sacrifice of the Gods. Tit for Tat.

The reason the Aztecs fell was not because of Spanish guns (which the Aztecs quickly learned weren't actually all that dangerous if you hit the ground before they fired) or steel (though it really, really helped) but because Cortez was a master of diplomacy and managed to weave an army of other Mesoamerican tribes, each of whom hated the Aztecs with a passion that would extinguish the sun if it were possible. This army numbered in the tens and quite possibly hundreds of thousands, all of whom were familiar with the land and methods of war the Aztecs waged. Even then, the Aztecs would have completely and totally annihilated the Spanish as they fled Tenochtitlan had the Aztec generals not lost control of their army as it went on a mass looting and enslaving spree (which is a probably that is hardly unique to Mesoamericans) and allowed Cortez to escape with a fraction of his army. From there, plague did the rest.
The Aztecs also admitted that Cortez was hard as fuck, and openly admitted his great skill in combat. Cortez routinely rallied his Spanish and allied forces personally and would fight in the thickest parts of the battle to inspire his men to turn the tide.
The Aztecs lamented that they lost their empire, but at the same time they did not blame the Spanish for doing what they did - after all, the Aztecs would have done exactly the same thing had their positions been switched.
