long story short, i am making a kolbold knight in D&D 3.5 he will be dex based and i want him to do fun things like trip and disarm. i know i cant hit them when they are down but still want to do tricky and anoying things. what are some good ideas i can do within the limits of not going too overboard and lose my knightly-hood.
You should start with playing 5e instead.

You have my condolences.
Use bolas and nets. Consider capturing and incapacitating opponents to be a noble alternative to killing them.

You'll need at least 2 weapons: a Net and a Guisarme.
Guisarme is a reach weapon that can be used for tripping. Nice for reach builds, and even as a Kobold you can make good use of it.
Nets can entangle your enemies. It takes a full round to escape and they get some penalties in the process. It is an exotic weapon, but it targets touch AC so you can use it efficiently without the proficiency.
The "Prehensile Tail" feat lets you use your tail as a grasping hand, so you can either use it for a shield while you wield 2-handed weapons, for 3-weapon fighting or for throwing alchemic items and such. Talk to your GM about the feat, as kobolds are a special case for tailed creatures (they usually have an attack with it, which kobolds lack).

FOR THE DRAGON LADY!

I'm pretty sure that's 3.PF advice, which is apparently not on the table...

Look into Swordsages. Their maneuvers don't rely on opposed checks, so even your small sized, dex based kobold can use them to trip.
