How do you do level 1 (or power level equivalent thereof) games?

How do you do level 1 (or power level equivalent thereof) games? Where do you like to start characters off? What challenges do you give them?

Do you immediately start them off with an overarching campaign hook or do you give them a few sessions of one-offs to set the mood and expectations?

War is always a good start. Have them engage in a few small battles, they get noticed, promoted to specialists, voila, you now have them serving someone and can have them go from there.

This is assuming that you're talking about D&D as a whole.

1: Start them off fighting small scale combats that an ordinary peasant wouldn't necessarily be able to deal with, like a small (Party Size+3) group of goblins or kobolds.
2: focus on getting them to level 3 as soon as possible, level 3 is the point in which criticals aren't likely to OHKO party members and it's also the point where they get their class' bread and butter abilities.
3: Realize that GM's only roll dice to hear them roll around, don't be afraid to use a screen and fudge where appropriate to prevent first session deaths from enemies getting stray crits, just be sure that you're subtle and use is sparingly once they reach level 3.
4: The aim of combat is to maim, not to kill. A good round of combat is one where at least one player is in the dying state yet everyone survives due to smart play.
5: Death should only come though direct player involvement, not because of dumb luck.
