As for Huan, recall that in the books we never actually see Sauron. Just his hordes of servants, and even their power stems mostly from fear auras etc. Like his master, in the end he was a coward and would never come out to do battle himself if he could possibly avoid it. Recall also that Gil Galad and Elendil defeated and killed him, and THEN Isildur cut off the Ring (not like the movie). That pegs his personal fighting prowess above nearly all men or elves, but he's not a dragon or a balrog.

Sauron is powerful, but his power is about crafting and command and destiny.

He would've something of a dark knight and general, similar to Sauron once melkor was defeated, but he couldn't forge rings no matter how he tried, and wasn't inclined to try.
