What sort of adventures could reapers of the dead have?

I'm not an edgy teenager but reading different beliefs about death, afterlives, and dying fascinate me

Everything from the elaborate death world of the Egyptians to the Maasai attitude of "lol nothing happens when you die, but it's bad luck for the village if the scavengers don't eat your corpse"

There's a Chronicles of Darkness gameline, Geist, the Sin Eater which is entirely about people who died, then were resurrected by engaging in a pact with a Geist (think powerful Ghost returned from the underworld).

Understandably, it's quite focused on death.
However the approach it takes is quite variable, and you can even go full Día de los Muertos with it.

Ever play Grim Fandango?

It's a day job, they work in pairs like a CSI show and have to track down wayward souls while wearing suits and cracking banter and then balance their life with their work.

One way to create more opportunities for adventure could involve several competing afterlives. When a mortal dies, agents from a variety of spiritual dimensions (Hades, Hel, Valhalla, etc.) attempt to seize it and claim it as their own. You could also get into hijinks when a soul resists the afterlife or tries to escape.

Angels of death are still angels.
Some people will cause problems but refusing to die (Mighty Moe from Grim Adventures of Billy & Mandy), and other problems will start from people wanting to die early (sorta like It's a Wonderful Life).
And between the quests in the mortal realm players could delve deeper into the underworld to interact with the people they have taken. Some souls could be happy while others might try to revolt their punishments.
Plenty of room for ideas.

Anything where the balance has been thrown off somehow.

If you don't get this OP just read the Discworld. If you already did then you have a comedic aspect of those adventures and some that could be made really serious (Arbiters).

Something I was thinking about the other day which kind of ties into your question. I'll try not to blog too much.

I read 'On a Pale Horse' a couple of years ago and was thinking about how it could be translated to an RPG. Maybe vaguely Dresden Files meets Cyberpunk (magic exists but is widely discredited, in a somewhat dystopic future.) PCs play one of the four horsemen of the apocalypse or other Incarnations of Immortality who have to stop an overwhelming supernatural force.

To answer your question for the reaper, (s)he'd still be in charge of collecting the souls of those who's turn it is to die and need to be individually judged on top of investigating the main plot line.
If you wanted to follow the book, if the player character playing Death were to be killed, the human killer would take the post of Death (As GM you could either hand over a new character sheet or any other way you want to follow on). Alternatively if it was a supernatural force that kills Death then they could get thrown back to Purgatory to recuperate.
Other Incarnations of Immortality could handle their character 'death'/handover of their post by other means which sort of relate to what they do or just do the same thing as the reaper.

This is also a great idea.
