Horses aren't combative creatures.

Isn't that exactly what PF does? MOunt Functions as an animal companion (see druid) using cav as druid levels? You just don't have an empathetic link

Most animals are spooks.
Most warhorses weren't trained to fight because it made them harder to control in battle.
Not exactly a good thing when you're trying to wheel around and your horse decides it'd rather kick the head in of some guy.

A horseman and his mount should have an emphatic link at least, the bond between a man and his horse should be fairly strong and borderline-castery.
Cavaliers should be basically paladins with horses instead of a stick up their ass.
Fix it by having Cavaliar be a Centaur only class.

The other Anons will already tell you this, but Horses are notorious cowards.
/an/ can attest to this probably more than /tg/ with all the personal experience they've had with equestrians, but the leading cause of death in their species is, "I was frightened by nothing and accidentally maimed or injured myself beyond recovery and must be put down."
If you want a mount that you can ride and is capable of defending itself without your calming influence you're going to have to pick a different animal- specifically, something that's main method of survival isn't to flee or better yet something that kills for a living.
Perhaps a large Dog or something.
