Because the math in D&D is pretty fundamentally broken. So the answer to your question is the same as "why hasn't some asshole wizard broken the economy with any one of a hundred spells?" and "how the fuck does anyone survive to adulthood when your average adult has less than 50% odds of ever making a save vs. disease?" They just do (or don't) because the author says so.

1) Wizards don't organise into vast empires that spread economic systems until they become intertwined across an entire world
2) empires that do spread like that have the means to fuck wizards who might do that shit up
3) The Economanticores from beyond space and time are attracted to magical economical fuckery and eat any wizard low level enough to do that shit by accident
4) The Anthropic Principle means that adventures only coincidentally take place in areas that haven't been fucked by wizardly hyperinflation.

How about a setting where outside forces are simultaneously trying to destroy AND save the world, but the players have something entirely different and much more important to take care of. Like getting next month's rent for their landlord after wasting their money on expensive brew and cheap women.

The bigger the scale the more the game devolves into a philosophical debate, and it's either a circlejerk or people will get upset because of disagreements, some of which are perceived as GM railroading.

However, if the scale is sufficiently small, your players become invested because they live a life of similar scope, and can relate to what's going on.

A Tiefling looking for his outsider ancestor out of filial curiosity. If you can imagine outsiders being people then it can be quite interesting. Same scenario for Dragon Disciples.

A Necromancer working on medical equipment that enhances regeneration using the ambient life force present. Works as a post-mortem therapist for both living and dead.

Fighter settles down, becomes a blacksmith, but old habits die hard and he still helps police the town.

A Cleric looking for all the folk tales about his deity, partially to find out which are true and to what extent, partially to give the finalised book to his god for nostalgia and giggles.

Druid, bored of saving villagers of poisonous plants, organises a training course for recognising natural hazards. Things get out of hand and the village becomes a mix of rangers, druids, and alchemists, plus a wide range of jobs that support their work. Druid is now the mayor by popular demand. He just wings it.

It's not important since the fun is on the journey, not the destination. As cliche as it sounds, it's the truth.

That said, saving the world may be more motivating if you managed to make the players give a fuck about it and the people that lives there. On the other hand, the players most likely have already played a lot of "save X place" games and will find "destroy the world" to be more original.
