Problem is, everyone is distracted by the big war with the beastmen, so they'll likely be caught by surprise

Not actually as bad as it could be.
Guns are rather common ( albeit not particularly modern, WW1/WW2-tier ), plus the populations are low and spread out.
There is lot of sea, so even if one continent/island would fall, chances are it wouldn't spread over it since I guess they cannot operate boats/planes.

Humans have fairly advanced weaponry in my setting, and most other races have some sort of magical power, so they wouldn't fare so bad.
The true problem is that a zombie apocalypse would be a chance for the two "evil" factions to take action. THAT would be bad.
They get cut down and exterminated in short order. Some planets are lost, but nobody really gives a shit.
