It's basically just an explanation for poison needle traps on locks. It's delicate business prying the things out of locks without springing the poisoned barbs or gumming up the lock, but that's what dwarven thieves are for!

The maroon mold is a fungus that grows on decomposing matter in the damp, cool conditions of dark ruins.

The solution is to leave your standard rations outside (in a sealed container suspended high up in a tree) and to take only iron rations with you into the dungeon.
An iron ration is an imperishable and nutrient-rich meal consisting of mineral-infused hardtack and pemmican alchemically prepared with anti-fungal and antibiotic properties.
A package of iron rations can retain edibility for up to twenty years even while kept in a dungeon environment.

These unusual specimens are examples of the phenomenon of subterranean-gigantism; the paradoxical tendency for ordinarily small animals to grow larger depending on how deep underground they live.

This oddity is accounted for by the higher oxygen content in the dungeon atmosphere (antique-collectors often note feelings of euphoria that starts out mild on the higher levels and gets more intense as they journey deeper.) Most arthropods (with the exception of book-lunged arachnids and crustaceans, of course) do not use lungs to breath but instead breath through tiny pores in their exoskeletons. The higher concentrations of oxygen underground allow arthropods to breath more easily, thus allowing them to grow to monstrous proportions compared to their surface counterparts.
