Eating brains only gives recent, surface level memories, and they fade away fairly quickly.
And killing the people you are interrogating isn't always the goal. Hell, SMs usually DON'T interrogate people, they leave that to other agencies. Only DA make it a point, and they do not do it to learn information.

Or they could leave their helmets on and use their improved senses of sight, hearing, along with the built in auspex of their helmet, to do the exact same thing just as well.

Actually some novels suggest that SM senses are so good that helmets get in the way of their sight and hearing, and this is why most SGT models are helmetless, to improve their situational awareness. Tac Marines wear helmets for the benefit of auspex and targetting systems.

Because the job of Interrogator Chaplains isn't to interrogate purely for information dumbass, it's to make them repent. Fallen are only killed if they try to run and the Legion is forced to shoot them, or after they have repented and they are given the Emperor's Mercy. The greatest accomplishment for any Interrogator Chaplain is making a Fallen repent his sins and beg for forgiveness, thereby saving his soul from Chaos.

The same reason why space marines can spit acid that melts steel beams. Not all of those abilities are meant to be used on the battlefield, but for rare situations they may find themselves in. Such as being captured by the enemy or needing to find out information from something the Librarian can't mindfuck/you don't have a Librarian to midnfuck the prisoner.
