It's really simple. Use a non-fetishized monster girl, have her be really annoying, and when the PC isn't interested have her show up Pepe Le Pew style with better and better equipment from adventuring in parallel.

Eventually she gets shaped changed to match the PC's race and thinks it solves everything. My GM did this with a goblin woman and it turned out great.

Imitating actual people is risky, because you can meet them again and they won't remember doing those things. More likely theyd take the form of a passing traveller, adopt a personality and an approach and if it doesn't work the dissappear for a while and try as someone else a different way. I imagine that the doppelganger would be quite good at assuming diverse personalities if they aren't both crazy and stupid.

Pure sneaky type (Rogue or some such) doesn't quite cut it on its own.

Coincidentally Paladin can follow ideal rather than a specific deity. And love is one of the purest ideals known to the multiverse.

Another option would be mixing Rogue or Ranger with spellcaster focused on Divination and Abjuration / Protection.

A seer that the group did a quest or two for in the early part of the campaign, making her one the allies that remain in contact with the group through out and will send them plot hooks, hints and messages. Except she wants to destroy the rest of the group, save the pc she loves. She'll send assassins, bandits and mercenaries that had to be sent by the bbeg, she'll give them false leads to dangerous monsters and dungeons, maybe even have them collect ingredients that she could eventually turn into a love potion. And if the object of thier affection gets eyes for someone else, terrible things will happen to them very suddenly, orcs will attack the village, villians will paint them a traitor, or they will find cursed items, god forbid it be someone in the party. The seer doesn't have anything with the bbeg, until of course her intentions are revealed, which if the bbeg promises the character alive she'll gladly work for him. This of course only works only if it's the long con or if the character doesn't try to start a romance with the seer.

Dowman Sayman. He specializes in batshit crazy but with a surprisingly touching aspect to it.

I'd recommend either Nickelodeon or Voynich Hotel by him, he's got a brilliant surreal sense of humor.

The one linked above does however have a like 6-page short story that's a riff on the Twilight Zone episode with the guy seeing a gremlin on the wing of the plane, except the plane blows up because someone in the cockpit yells out the trigger phrase I LOVE DICK.

I keep to third person pretty much 100% of the time and use inflection to add to it. Sort of like what I have seen Chris Perkins do - maybe a little accent and social cues for the character but it all sounds like Chris Perkins.
