Several reasons.
1) You get to decide which spell you're losing rather than letting your opponent decide.
2) You deny your opponent the knowledge that you have other counterspells/removal in hand and which those are.
3) Your opponent might think that you have an important combo piece, finisher, or sideboard card in hand and try to play around it.
