There are varied opinions on this, and learning the game with each race will teach you some things but also have drawbacks.

There's no real substitute for being a well-rounded coach that tries everything, but spectating and watching replays and trying to understand the decision-making on both sides helps a lot.

Overall, I would suggest picking a team that appeals to you and that you would like to stick with. Being a good Blood Bowl player is a lot more about decision-making rather than roster selection; Halflings in the hands of an experienced coach who knows his odds will likely stomp a complete newbie with a much more powerful team.

Having an attachment to your team's style/fluff/background will do more for you in the long run, because you'll stick with the team through the losses along with the wins (and generally it's the rough patches where you'll learn the fastest).

Just play orcs. Build a team that has 3 rerolls 4 blitzer, 4 black orcs, 2 line orcs, and a thrower.

As soon as you can buy an apo then 1 or 2 more line orcs.

On the thrower take Block then kick off return then leader. If you roll a double take dodge and if you roll a stat up take the stat up.

Black orcs should all be built Block, then Guard, Then Mighty blow. Doubles are for dodge and ONLY take +st as a stat up.

Line orcs take Block then fend or tackle. On doubles take guard and ONLY take +st

For blitzers Double is for dodge, every stat up is good and they have 3 really good skills, Guard, Tackle, Mighty Blow and 3 OK skills Pilin on, Frenzy, and Strip ball

Then just try to roll as many 2 die blocks as you can till everyone else is dead.

Like I said, just pick a race that appeals to you on the basis on fluff or idea. Out of the 21 rosters in the game, there's got to be at least one that makes you "cool, I can play ______!" If there are several, just roll a d6 (or other random generator) and choose one. Or pick the one that you can come up with a team name for.

You can always learn that team's play style first to get to grips with the game and switch over to other teams later. Don't worry too much about the long-term game yet - just try to get the basics down, which are:
-understanding which dice are rolled and how many - agility vs. block dice
-how to count assists
-how to set up a cage
-how to set up a screen
