Build the castle into a mountainside with it's own reliable source of fresh water for dousing fires and holding up a siege. Lots of stone work and fireproof insulation so the structures don't turn into ovens, and build heatsinks into them to help carry that heat into the ground rather than just into the structure.

Also, don't give that fucker a place to perch, or if you do make sure you've got some good weapons or even entangling traps to keep it pinned so you can bring the beatdown where it's weakest.

And most importantly don't give it a big door a dragon can get in through and even if it can fit its head in give it a large open space with not much flammable material and good ventilation so it can't just spout fire and cook the castle from the inside out. Better yet if you can bait it to try just that and trap it in the opening.

So, spikes on the roof and stuff like that. Slits for siege crossbows so you can shoot from any angle. Perhaps building it into a mountain/hill or disguising it as a fairly big hill would make it hard for a dragon to even identify when flying over it - which honestly could be ideal.

Ever read Arcana Evolved? It's Monte Cooke's attempt to do DnD 3e but better (never works), but the setting is interesting for having giants be the dominant race having liberated humans and others from slavery by demon-dragon-spider hybrid things.

In any case, the setting has stuff like what you just said with reference to how a race builds fortifications to defend against magical flying creatures.
