Those shows have a similar animation style and tone, but are Vastly different and require different things from their systems.

Gravity Falls is about mystery and revolves around "normal" people. WoD, low powered generic systems, or GUMSHOE would be a good fit.

SU is about exploration (or slice of life depending on the episode) and revolves around exceptional characters. Savage Worlds, a super powers Generic system, MHR, OVA, or Cypher System would work well.

It's similar to adventure time in some respects but unlike that show the story actually progresses regularly and we're learning more about our heroes and who they're fighting. Overall it's surprisingly well written and has some genuinely interesting characters when we learn more about who they are as people.

Also the fact that half the standing cast is lesbian rights rock people with wildly different designs between them lets tumblr jerk off to it for being "progressive" so that is unfortunately a large part of why it's as successful as it is. but in fairness, unlike the legend of Korra ending it doesn't feel pandering and is actually pretty easy to ignore in the face of everything else that goes on.

+1 to that, not to mention the main character's love interest in of the opposite sex, so much for taking down heteronormativity.

I like how the series' outlook is very positive in many regards, the characters rather deep, the lore simple but fairly coesive, the fact they don't ioverdo it with crazy characters (I mean, four gems, one being a known fusion of two, two ennemies and a somewhat neutral other character, we rise to a total of 9 known gems... There could be a real onslaught of characters, and I feel there's been some actual restraint on this, to the point I'm eager to see what comes next.)

Steven Universe is nice. It's tender, it's fun, it's colorfull and pretty. I find it endearing, and although it's not extremely profound, it has its moments.

There's something insidious about it you know? Like, /b/ knows they are being assholes, it's a conscious act of wrong doing, But on tumblr, when they do something like that. They feel like they were in the right. That by harassing someone, they aren't being a asshole. they are bettering society.

That's much more disquieting then someone just being a dick for 'teh lolz'
