I wrote a story using character built out of an rpg with random quirks rolled up.

Probably the saddest thing I have ever done but I was poor and living on a farm 70 miles from anyone who gave a shit about rpgs.

Just had talk and interactions with one another as they ran up on random encounters.

If you pay more than ~$5 for all of the DLC (except Horse Lords) you're doing it wrong. Wait for a big sale. Happens all the time for CK2.

Some of the more obscure ones even have you stat up your character and roll to complete or fail challenges. I even owned a battletech one as a kid.

Solo Modules, Solo RPGs, Gamebooks, and GM Emulators are what you're looking for, anon.
Solo RPGs were a big deal back in the day, and there's been a bit of a revival of Solo play in recent years.

Since it doesn't seem to want to accept the Traveller solo book I tried to post, have a book full of solo mini-adventures for OSR play.

I'm in a similar boat, anon.
Every night, I spend the last waking hour or so thinking of different occurrences for my players, then seriously consider scrapping them, for fear of them disliking it.
My biggest self doubt comes after sessions, though, when I ask they players if they enjoyed it, and even though they've yet to answer in the negative, I wonder if they're just saying it or if they actually had fun.

Well you could come up with a system to roll for things for a basically "automated" DM.

Or if you trust yourself to not metagame you could simply act as both player and GM, like playing chess against yourself, where you just look at the board and go "alright if I didn't know what strategy I was attempting, how would I react to this situation against a real opponent."

I've been playing around with the idea of making an adventure module combined with a web app to do some crunching behind the scenes to emulate the DM. Player actions outside of combat would be broken down into puzzle, specific actions, or Tones. Tones would be more for NPC interaction. Since the app wouldn't be able to handle very complex actions, you could say you're talking to the shop keeper and choose from a dropdown list of Tones like Aggressively, Seductive, Mocking, etc, which would let the app get the jist of what you're trying to do while you could roleplay the rest.

The part I've been hung up on is if there's even interest for that sort of thing, and if there is should be it tied to a specific system or be system agnostic.

I always found writing about one-man campaigns much more entertaining than playing them, making up original magic systems and all. I've actually made a 9 page cyoa I'll never share because it's so personal to me.

Depends on what aspect of the hobby you care about.

If you want crunch, certain videogames will do the work. Mostly non-action RPGs and strategy games, various have already been mentioned.
If you want emergent storytelling, writing should do the trick. Just don't think of heroes and villains or quests. Throw some characters into a weird situation and observe how they behave. If you have even a modicum of talent the characters will surprise you.
If you're in for the social interaction, your shit out of luck.

You get a bunch of cyoas now and then that are about throwing you into a situation and giving you tools to handle it. You usually only get the start of the story handed to you and have to make the rest yourself. The usual dreck ist more common because free waifus/powers are way, way, way easier to make and get you more replies.
But then I'm no expert on that stuff, I just go there to create stuff to scratch the occasional game design itch.

I remember one of the Fighting Fantasy-esque ones that had you driving around in mechs of all sorts. I loved the ornithopter-y one that literally flew circles around the opponent on good rolls.

Kinda sucked when I went up against some superboss mech that did an automatic point of damage every round because it had So Many Weapons, though.
