How do your players justify their power builds in a narrative,

I mean you always wanna make sure your character is good at what they do but sometimes its just fucking ridiculous.

Another player in my Edge of the Empire game is a regular person who discovered they were force sensitive and is on the run from the empire. It makes sense that he's already a jedi class with high strength and melee skill from the start right?instead of civilian class with high strength that could grow into a jedi as the game went on right?

An untrained force sensitive shouldn't be using the Jedi class. If they want to use the Jedi class then they need to change their character to be a Jedi in hiding. I mean, that's the whole point of the class, right?

Depends on the system, sometimes you have to be lenient with their builds because a game is a game, not a book, and their farmer with zero knowledge on self-defense isn't going to survive shit nomatter how much of a main character he's. Players lack the plotarmor characters in narrative have.

Character depth and mechanical efficiency aren't mutally exclusive, anon.

If you still have time to make your character, then pump your stats up.
It's impossible to do so during play in EotE (as far as I remember), and you'll essentially have the same rolls as someone with low stats, but lots of skills.
If they didn't change it, it's not important to have a high initiative, which helps.

Powergamer: a gamer who learnes the rules of a game inside and out to perfection in order to become the best at that game.

Minmaxer: someone who attempts to understand the nuances of a role-playing system in order to tweak their character to be highly optimized.

A minmaxer would use a monk or a fighter in D&D, a powergamer wouldn't even bother to play anything that isn't CoDzilla. One wants to get the best of his character on a single task while sacrificing other stuff, the other wants simply to be the best at everything in the game and win.

Different guy but, is there a class called Force sensitive? Force adept? Different Force religion/culture? if the only way to use the Force is by being a Jedi, well, Jedi it is.

I remember Star Wars saga had talents and feats that allowed any class to be a walking joke using the Force, literally shitty in every aspect, if this system is similar it would be just mean not letting him be a **Jedi**

There's, minmaxer, powergamer, munchkin and ruleslawyer have all different meanings. And minmaxer is the less bad of the four.

Munchkin is a cheater.

Ruleslawyer is a dude who gets advantage on the poorly worded rules.

Powergamer is the dude who wants to win the game and be the best at everything.

Minmaxer just wants to make his character effective at whatever his character's job is.
