Why does this league have such a huge gap in skill level between teams and players?
Are there too many teams? Too difficult to find people who are both tall and skilled?

its not the league its the sport. because bball teams only 5 players on at any time it makes the elite players have a bigger impact when compared to elite players from other sports.

Idk, we've seen the past less talented teams beat super talented teams, Mavs and Spurs beating the Miami team, or Pistons beating the lakers.

Despite basketball having more than half-a-billion worldwide participants, the talent pool is actually pretty shallow since the game's requirements exclude the vast majority of the population.
Unless you're a super-manlet like Bogues, Spud Webb, Nate Robinson, Isaiah Thomas, every position requires height of 6' and above, with 4 out the 5 positions requiring height of 6'4"ish and above. And you also need to be a freak athlete.
Most people who are 6'6" and up tend to be uncoordinated types who battle life long joint problems and such.
Lebron is quite literally one-in-20 billion.

It's a sport sensitive to small amounts of talent differential that tends to have large talent differentials.
A lot of this is due to the size you need to be to play in the Nba. The average Nba player has been 6-7 for decades. There's more 7 footers than guys below 6 in the league right now. Being 6-7 is not common at all. This automatically cuts out a the vast majority of men from the talent pool. The more narrow the talent pool, the more likely you are to have bigger deviations.
The average game is more predictable than an nfl(or nhl or mlb) game but basketball plays 5 times as many games and has best of seven series so there's no real room for chance to play a factor.

Spurs were pretty heavily favored to beat the heat in 2014. Those are exceptions to the rule.
Soccer is for men of average height and weight but there are still severe skill gaps for most European leagues.

That Mavs team may have been an exception outside of Dirk being amazing. But the Spurs teams were not exactly devoid of talent and that Pistons win over the Lakers was due to LA being in meltdown mode as it was with Shaq and Kobe in the middle of hating each other combined with washed up vets going for rings.

That spurs team was pretty old and kawhi was young with very little experience. They basically got by on pure strategy and coaching.
