It really depends on your definition of reach their potential. Guarin was a literal who at a fairly poor Colombian team but had great PA, was dirt cheap and would go on to be one of the best in the world. Now Guarin IRL may not be a household name but he was playing for Inter until fairly recently and doing a pretty good job there so imo that would count but he didn't become the world beating, household name that you might have associated with a guy with his PA.
If you are willing to be a bit looser with your definition of "reaching their potential in real life" then there are probably quite a few. Plenty of virtual unknowns that FM rated from a young age went on to do pretty well at fairly big clubs.

then we see two guys in a pub drinking beer, they are watching TV and their club conceded and the pub goes "ohhhhhhhh" with swearing going around. one guy shouts "goddamn fuck this manager" and the other guy is like "man, if it were me i would have..."

you see the same guy on a training field screaming "train your technique, you can't even pass yourself out of a retirement home!" or something else that is witty, the players are wearing shirts with football manager 2018 on it

we see the same guy in a suit sitting with the boardroom of the team he manages, the boardroom says "i hope you will spend the 20 million wisely" while the other guy smiles and says "haha yes sure, of course, thank you for your trust"
