For a good XMPP multi-user conference, check out [email protected]; creep.im offers in-band registration from most modern XMPP clients.
There is also an OMEMO encrypted chat, ask meower2000 about an invitation if you are interested.
For a good Discord replacement, check out Matrix and Riot, a server and client respectively for decentralized communications.
There is a public, open registration server specifically for anons at banter.city, and a guest-accesible Matrix room at:

For Twitter-like micro-blogging, check out unsafe.space, a postActiv server that offers open registration, minimal censorship, and federation with the rest of the OStatus network (GNUsocial, Pleroma, postActiv, Mastodon).
Remember to check out the GNUsocial Axis at gs.smuglo.li, the go-to group for anon activity in the OStatus federation.
