I'm thinking about doing this but I don't know if I can do it since I have thin stringy hair that always wants to flop all over the place

Save time, don't cut your hair more than once a year or so, don't wash it more than once a week. When it gets long enough to be in the way, you can put it in a bun, braid, or braided bun.
