if you're referring to the shape of spaghetti (and not the idea of pasta itself) then here is my guess:
it has a big surface area relative to it's volume (i.e more room for sauce relative to pasta), it's easy to pick up with a fork AND a spoon, it's easy to make and it's pretty easy and fun to eat.
