What type of tree is this? I have seen several different landscape painters depict it so I don't think it's simply artistic license

Could be any of several hardwoods.

If I had to guess, it looks like trees that grew up with other trees tight around them, so they are tall and skinny, then something (fire, disease, avalanche, logging) took out the forest and left these guys, that are now filling in foliage lower on the trunk now that sunlight reaches that area.
