How much would it take to go through this and complete all the exercises?
I want to stop fucking around and finish a book for once.
I have prior experience in Topology and Analysis.
Depends on how much you study, how good you are at absorbing new material and solving excercises. Honestly, just go through ~two chapters and you'll know your pace
Honestly I think I will take me months even at ~10 hours per day.

Some books offer excerises that force you develop some material on your own. So without doing excercises you may miss some material.

This.
Then doing exercises you develop way more understanding and insight into the theory.
Why do people read Munkers instead of Willard?

Half the content in some books is left as exercises. Atiyah-MacDonald and Hartshorne are good examples.

Munkres is boring and slow af

It helps getting comfortable with the subject. Also doing maths is much more fun then just passively reading.
What if I don't allow myself to sleep until I have finished a whole chapter?

One can't study effectively without breaks for a long time. Good sleep and breaks are essential in learning. I guess passion can be a game changer. For example, sometimes I can't really fall asleep as I can't help thinking of some exercise/topic until I feel I have solid understanding(this can be really annoying)
