Evolution isn't a ladder. Bacteria today are just as evolved as mammals - arguably even more so, since they see orders of magnitudes more generations and mutations than slow sexual reproduction.

You could have phrased your question as "Could humans ever evolve to be unicellular again?", to which the answer is "sort of" - for example, the HeLa line may count.
