QFT models everything as fields. Particles don't generate their own fields, so the chicken/egg problem you're imagining isn't a things. Electrons are excitations of a field. Electrons also "generate" a field, but not an electron field. The field the electron does "generate" isn't really created by the electron, the electron just interacts with other things by exchanging energy and momentum which is mediated by other fields. So it's all fields. Turtles all the way down.
