every math graduate who is not a moron should be able to pretty easily fall back on getting a job in software, if nothing in finance or statistics or any general vocational graduate recruitment works out.

why do americans have this idea that the only job you can get is your "major".
Is it the case in America that graduate recruitment for accountancy training programs only takes in people with an accounting undergrad degree, or that most companies only take graduates who studied business?
Does everyone in america who studied languages end up working as a translator/interpreter/language teacher?
