If gravity was fake, why would the balloon go up instead of stay right where it is?

Buoyancy is dependent on the direction and strength of gravity. No gravity, no buoyancy. The object would not be displacing any water that is working against the force of gravity.

Stuff doesn't float to "true up", there is no such thing.
