Rosenlicht's analysis
Herstein's topics in algebra
Munkres's topology (do this after analysis)

What's the best way to learn Calc proofs? All the text books seem kind of shit about it.

If you don't know calculus, read a proofs book then read Courant/John (then goto Apostol/Rudin).

If you know calculus but not proofs, read a proofs book then read Zorich.

If you know calculus and proofs and done a few advanced math courses, read Apostol's Mathematical Analysis.

If you know calculus, proofs, and done many advanced math courses, read baby Rudin.

Is he saying to skip the problems in Stewart or to focus mostly on problem solving in stewart?

I have never done it but I think it's doable with dedication and self motivation.

It doesn't matter just do which one you find you like more first. Usually you do analysis first; because the motivation for some things in topology wouldn't be clear, but if that doesn't bother you don't worry.
