If 1 mole of CO2 dissociates in blood to 1 mole of H+ and 1 mole of HCO3-, why does a change of CO2 partial pressure cause acidosis or alkalosis? Why doesn't the bicarbonate just buffer the hydrogen?

I'm familiar with the Henderson-Hasselbach equation. I guess it's not about the actual number of particles but rather the ratio shifts harder for H+ than HCO3- since the concentration that supports a pH of 7,4 is HCO3- to carbonic acid = 20:1 to begin with.

Maybe my question will be more understandable if I tell you how I got to it. According to my textbook:

CO2 + H2O <--> H2CO3 <--> H+ + HCO3-

Carbonic anhydrase as a catalyst gives us carbonic acid (there is a solubility coefficient for carbon dioxide which is 0,03). Yada yada dissociation constant and you have bicarbonate and protons.

The relative amount of the substances in the balance state is constant.
If you increase the amount of one substance on one side of the balance it also must increase the amount of substance on the other side of the balance.

Do you know the formula for the equilibrium constant?
That should explain everything.
