What other math classes should I take? I've taken calc 1-3 and discrete now. My major only requires these 4, stats, and a math for engineers class, which seems to just be differential equations and complex analysis, but I see top programs (I'm at state u) do require a little more.

Other options im considering are linear algebra (bits of it are included in engineering math), abstract algebra (linear algebra is a prerequisite), and real analysis, but will they be useful at all for EE?

Linear algebra for sure. I'm a little baffled this isn't required for your degree.

Guessing it's because of time restrictions. A lot of the kids who intend to major in engineering at my state U start in pre calculus or trig, as my state state has one of the worst public education systems in the United States.

I, myself, started in remedial algebra (as in, algebra 1 taught in hs)

Linear algebra certainly. At least some familiarity is expected everywhere. Besides that I don't think engineers in general use much advanced math. Maybe some complex analysis for computing integrals and methods for solving differential equations. Abstract algebra and real analysis are unlikely to be useful because they're rigorous math which I don't think engineers care about. I would ask a professor of engineering that you suspect needs math.

Linear algebra is essential to math, physics and engineering, take that.

do lin alg, and try and take a class in stochastic processes, and PDE's,

You'll use a shit ton of linear algebra in EE. You probably don't need Real analysis or abstract algebra unless you plan to pursue higher level mathematics.

Most EE's will do fine with differential equations, linear algebra, and complex & vector analysis. I'd recommend discrete mathematics as well, but Anything beyond that is gonna overkill for EE.

If you like math and would like to minor in it or plan to pursue a mathematics master's degree you should definitely take real analysis and abstract algebra and anything else you can fit in your schedule (they'll usually tell you to go take a few additional classes if they deem your mathematical background insufficient) otherwise they're probably not gonna be worth the time and effort.
