Fantastic question. There is still research on pilot wave theory recently invigorated by viscous droplets acting as both waves and particles in a macroscopic sense. Great stuff. But mathematically and experimentally the statistic interpretation is much more useful. So, we use it.
Essentially that is what string theory is, the ultimately "pilot wave" theory.
