There is land that could technically be used for farming, but the investment costs, combined with pathetic yield, means that we can't simply "farm more" at the same rate we have. And "food" is only a minor factor in the larger picture.

A better example might be crude oil production. There used to be many convenient places to get oil on land, that were relatively cheap.

After these dried up, people switched to making oil wells in water, which is many times more expensive, but were the only deposits available.

In the next decade or so, more money will be spent on attempting to find new oil deposits than it takes to actually mine the oil out itself, since it will be so rare.
