Why can't we split quarks and leptons? if we could what

Leptons are fundamental, ie they aren't made up of anything. Quarks have a property called "confinement" so if you tried to separate them you end up just spontaneously producing another quark pair.

Anon means splitting up bound-together quark pairs or triplets.

Like rubber bands, the bonds of the Strong Force keeping quarks bound into configurations like protons store energy, and it you have to put in quite a lot of energy to pull two quarks apart.

Because of the unusual behavior of the Strong Force, if you pull them too far apart, that stretched bond actually 'snaps' - its stored energy becomes enough that it can actually pop out a particle, since mass and energy are the same thing.

As it happens, that energy is enough to create a new quark, and a bound quark pair's a much more preferred, low-energy state than a single quark. So there's no way to ever isolate a single quark from a proton or something; any attempt necessarily also pops out a partner for it.

(And because of charge & other conservation laws, it's also impossible to make lone quarks in collisions or anything, because you have to produce an antiquark of the same color to make the quantum numbers balance out. These exist most stably as a bound meson, so you just get one of those instead.)
