Well how about this for a suggestion then, you drop everything and focus on working, you live like a monk and spend near nada, all money you pile up you invest to get good interest, once you've managed to get your ass financially independent you retire, then you lock yourself up in some place and you spend day and night slaying your gigantic backlog and whatever airs.
No matter what the fuck anime is going to look like at that point in time rest assured One Piece will still be airing. Also, learn speedreading.

I havent watched since summer season last year minus owarimonogatari season 2. I get all excited and then dont watch more than one or two episodes of most airing shows because I bite off too much. I'm only able to watch anime at a consistant pace if I watch with someone else

I always found anime the better form of entertainment since the episode are usually about 20 mins long. It's why I prefer it over western shows since you can binge watch it fast without taking up shitloads of time.
