How do people manage to clock in 1000+ hours into a single game on Steam? I've got tons of games and love PC gaming as much as the next guy, but after 100 hours, I get tired of the same gameplay and need to switch to something else. That's even true for competitive multiplayer games.

Neither good nor bad. If you're a fan of immersion and autistic oob planning, I'd recomend HOI3 over HOI4, as nr. 4 lacks all of the detailed organisational aspects that made HOI3 great. No more individual division commanders, no more corps, armies, army groups and theaters.
Historical OOB's a completly out of the window.
AI wise, HOI4 sucks. For example, taking out France in 1936/37 as Germany is criminaly easy. The strategy AI and battle AI are absolutely retarded. See the Soviets pump out 500+ divisions of riflemen, only to throw them against your lines and have them run out of equipment and manpower in notime. Or have the allies position 100+ divisions of various types in Burma, to fend of the Japanese. Attrition usually does more harm than the Japs.
What's good however is the flavour that the focus trees ad to the major powers. But without mods, most focus trees are pretty lackluster in terms of historical decisions and stuff.
To summerize it maybe like this: In HOI3 you were like Hitler, meaning you were mainly focused on warfare, with politics and industry as secondary concerns.
In HOI4 you take up the roll of Albert Speer. Your primary concern is the armament industry and technology.
Both can be fun.

I don't have a clue how I managed to clock 700 hours in a single Skyrim playthrough, that was done in about 4-6 months and about 5 years later it's only gotten to 1022 hours. I have no clue how so much time slipped away into one game. And even though 700 hours might sound like a lot, I never figured out how to restore the thieves guild like god fucking damnit. In retrospect though I don't even think Skyrim was that great of a game, I think Morrowind is better in general, even though I have only sunk in about a tenth of the time into it.
These are some very low hours on record, I would've expected more of /r9k/, but I guess that just confirms that the board's filled with 18 year old casuals who think that spending 1000 hours playing a single game is a lot.

Before I quit wow I tallied up the time across all my characters and it came out to around 11,000 hours. Not including my vanilla or BC characters, that would probably add another 2000-3000 hours. My one guildmate still plays and has over 26,000 hours.

It all comes down to replayability.
If it's a game that I like with little replay value, usually I'll screw around afterwards or maybe replay it once to get achievements and 100% it.
If it has more replayability and I like the game I'll put in a lot of time, going at least to triple digits.
If it's a game where I don't like it so much or don't want to put in so much time, I don't. These games are mostly good but repetitive.
If it's multiplayer, every game feels different so I don't get tired of it if the mechanics are good.
I just find an excuse to play the game, where I get 1000+ in 1-2 games and few hours in others.
