ethereum's pretty longterm. I think the majority of coins are integrated with ethereum for it's smart contract application but I've heard rumors of the devs for ethereum falling off the horse and altcoins following suit. Ethereum classic instead will take the reigns.
Only a rumor though, you'll want to research anything you buy but ethereum is a solid invest. Whatever you do don't sell because you're panicking that it's going down. Have a strong hand, faith, and wait for the market to grow. You can't lose money if you don't pull out.

mining is a bit of an ordeal. you can mine for shitcoins which is a lot easier but more risk involved. You could mine bitcoin at a loss but capitalize on the long term investment.
Something new has come up from a fork with bitcoin, bitcoincash. bitcoincash BCC is worth 300 a coin right now and the mining difficult is very easy compared to bitcoin.

I don't know about people that live in europe. I'm sure there's an exchangery out there for you sops. You can always go to localbitcoins and buy from someone there. Then sell your bitcoin at an exchange for ethereum or shapeshift it.
