Because Sans was a cool guy. It's a lot easier to romanticize a short and fat (he's not even fat he's a fucking skeleton) character because their fictional. And thus their flaws are easily overlooked.

Also Sans was not beta, he straight up tells you he'd kill you with no hesitation if it wasn't for his promise with Toriel. And he's also the hardest boss.
