Old school is vastly superior but still not as good as it was ten years ago. Earning bonds takes some time if you're starting from scratch, just focus on having fun in the f2p game for now. If you amass the gp for a bond (2.5mil last time I played), make sure you save some capital so that you can earn back the next bond even more quickly. Once you've been a member for a month you'll probably find a method to quickly grind out a bond in just a weekend or so.

It's unsatisfying, there is always more xp to grind for no real rewards because it's just a stupid game

Current OSRS player. Narrows down to two things: PvPing and time. If you want to do any form of PvP, OSRS is the clear choice, and it's not even close. Secondly is time. OSRS is far more of a grind than RS3, so if you're strict on time, go to RS3, because you'll never get anything done in OSRS.

OSRS first for sure then. OSRS is a lot more straightforward and has less quests. Everything's a lot more intuitive and you can tell how something works just by looking at it.

RS3 is OSRS but with ~ten more years of content. The problem is the content is mostly bad; they overhauled the combat system (in a way that no one wanted), Also added in shit like micro transactions and the graphics just look fucking awful. OSRS has a comfy retro feel while RS3 just looks bad. The colours are all fruity and everything's a shapeless blob. Go ahead and try both games for a while, I think you'll make the right decision.

If you want something that isn't "toxic" best off sticking to reddit. Both games have communities that essentially boil down to the same thing: devs are shit and don't know what they're doing, other players are killing the game by promoting bad updates, and of course there's the divide between OSRS and RS3.

I haven't played in a while so need some advice. Is there a particular build I should be going for? I know about having alts that are pures but what if I just want to go through the quest and explore, etc. Does it really matter? What even is there to do in the game aside from what I've already mentioned?

Both games have their own thing going on. While OSRS is more focused on grinding progression and pvp, RS3 is focused on endgame content. Quests are also more fleshed out in RS3.
The major gripe I've seen about RS3 is mtx but I don't really get it desu. You could have always real world traded ingame currency or botted to speed up your process anyway.
You should just try both games without prejudice and see which pne you like more
