The other servers WILL gossip about it behind your back, which will lower the quality of your working environment, your male coworkers WILL passive-aggresively (or just plain aggressively) shit on you, which will lower your quality of life even further, and this WILL jeopardize your continued employment. Maybe not immediately, maybe not even after a few months, but it WILL happen, and as a direct result of you becoming entangled with this girl.

Now, all that said, I suggest you go for it anyway. If you work in one restaurant you can work in another. The industry is one big revolving door. And maybe this will work out for you as a long term relationship, IF that's what you want. In my experience, it seems unlikely, but then I don't know this girl and I don't know you. If you're looking for a quick fling, then the only thing you have to consider is an exit strategy if she doesn't get it end it herself on her own terms. Given that you've already thought out this scenario this far though, you'll do fine.
