It doesn't really matter to me at all
It's totally within reason and contextually makes sense that God could have just altered the world to make it appear as if it never happened even if it was global.
However just to clarify some things for you based on the teachings of the Catholic Church (something I promise that youtuber is not familiar with)
It's not neccessary to argue that the Flood was global or killed everyone, to argue so generally comes from the line being taken out of context and from people who aren't actually scholars.
This whole argument is just kind of absurd in that for it to have any merit it would require there not to be a God who can change the world. If there was actual evidence it would keep people from having faith so it's said quite explicitly he hides such things. Christ himself spoke in parables.
Most of the arguments these videos have are against very new groups of Christians from the protestant reformation who have a doctrine called sola scriptura. This basically means anything they interpret from the Bible is true just because they beleive it. This belief is only about 600 years old and has led to tons of weird beleifs.
Young earth creationism as you know it is itself only around 200 years old. The true Christian Fatih and Church has existed and been unchanged for 2000 years since the time of Christ
